I recently started making this sandwich as an after-work snack for me and my sister. It’s so easy and delicious! The pesto adds great flavor.
Makes: 2 sandwiches (or 1 sandwich with an avocado half on the side)
Ingredients: an avocado, lemon juice, salt, pepper, basil pesto, shredded mozzarella cheese, butter, and 4 slices of bread
Directions: In a bowl, mash avocado with a bit of lemon juice, salt, and pepper. Spread two slices of bread with butter on one side. Flip one slice and spread thinly with pesto (so this is on the un-buttered side). Spread half the mashed avocado on top of the pesto. Sprinkle a generous handful of shredded mozzarella on top of the avocado and top with the second slice of bread, buttered side up. Place sandwich in pan on medium heat, and cook until golden-brown on each side, about 3 minutes per side. (To flip neatly, you can transfer the sandwich out of the pan to a plate, flip on the plate, and return to pan.)
Repeat to make a second sandwich. Slice each in half and serve.

I thought I’d be into cooking in my apartment but I’m really not. I made a list of foods that have minimal prep work.
-falafel with store-bought pita, Israeli salad and techina (I can get 1/2 price salads on Sunday morning from a store here and they keep well for a few days)
-chicken prepared by the grocery store with different marinades and spices
-deli wraps
-chicken nuggets (real and pareve, I like Gardein brand)
-macaroni with cottage cheese
-I want to get a rice cooker
-I checked out Cooking for One by America’s Test Kitchen and there are a handful of recipes in there that look good.

Another easy one I do is tuna and melted cheese either in a wrap or on bread.
And for the macaroni with cottage cheese, I first defrost frozen spinach in the microwave, then I add cottage cheese, shredded cheese, and garlic powder, and the macaroni, and warm it all up in the microwave.
There is frozen breaded eggplant which you can use to make an easy version of eggplant parmesan (just put marinana sauce and cheese on top)

A milchig frying pan might work instead of milchig oven for some things. Which reminds me – how did I forget to include eggs (hardboiled or scrambled or omelette) on the list?
